Homemade Pizza!

Homemade Pizza is really simple and can be a fun Friday night activity for the whole family! This makes enough dough for 4 personal size pizzas, one medium/one personal size, or one large pizza. The picture above is Noah’s favorite- stuffed crust pizza with pesto sauce and mozzarella cheese. We butter our crust and dust with Lawry’s Garlic Salt for an extra punch of flavor. My personal favorite is BBQ Pizza made with my smoked pork butt and The Bomb BBQ Sauce. Create whatever combinations your heart desires!

Homemade Pizza is really simple and can be a fun Friday night acivity for the whole family! Use this recipe to make your own dough and top with your favorite toppings!

Equipment

  • KitchenAid Stand Mixer or large bowl and spoon to hand mix.
  • measuring spoons
  • measuring cups

Ingredients
  

  • 1 1/2 Cups Warm Water
  • 2 1/4 teaspoons instant dry yeast
  • 2 Tablespoons Olive Oil
  • 2 teaspoons salt
  • 2 1/2 Cups Plain Flour

Instructions
 

  • Combine the warm water and yeast, stir to mix.
  • Add the Olive oil, salt and flour. Mix until the dough is uniform throughout. Knead the dough for 3-5 minutes.
  • Let the dough rise/rest, covered, for 30-45 minutes.
  • Preheat the oven to 375 degrees.
  • Divide the dough into 4 equal sections for 4 personal sized pizzas. Divide the dough into 2 equal sections for 2 medium sized pizzas. Or make one big pizza.
    Roll, pat, or stretch the pizza dough until it is 1/4 inch thick. Place the crust on a pizza pan, baking stone or cookie sheet. Top with your favorite pizza sauce, cheese and other toppings.
  • Bake at 375 degrees for 5-10 minutes and enjoy!

BBQ Pizza

For BBQ Pizza, stretch the pizza dough until it is 1/4 inch thick. Place the crust on a pan. Spread the Bomb BBQ Sauce over the dough, sprinkle pork BBQ over the sauce, then spread Cheddar/Mozzarella Cheese over the entire pizza. Some other options for toppings on this pizza are slices bell peppers, Pineapple tidbits, French fried onions, or red onions. Bake at 475 degrees for 5-10 minutes. Cool slightly before serving.

It’s really fun to come up with your own pizza! The kids especially enjoy Pizza night at our house! What’s your favorite pizza?

Bacon Broccoli Salad

I love side dishes that can be prepared ahead of time! I love to host BBQ’s and this is always a big hit with my guests. You can prepare this up to 2 days before serving! That means you have more time to enjoy your guests. A BBQ should be a stress free gathering with friends and family. If you prepare Bacon Broccoli Salad, my Not Your Mamas Potato Salad, smoked pork BBQ made with my homemade BBQ RUB, The Bomb BBQ Sauce, and add a handful of close friends, you have the recipe for a great backyard BBQ! Add some Divine Lemon Cookies and your guests may never leave! Build a fire in the backyard and play a couple rounds of “Mafia”. Sounds like a perfect evening to me!

Bacon Broccoli Salad

Ingredients:

  • 2 bunches fresh broccoli, washed and cut into bite size pieces
  • 1/2 cup thinly sliced red onion
  • 1 cup dried cranberries
  • 1/2 cup bacon bits
  • 1 cup mayonnaise
  • 1/2 cup granulated sugar

Directions: In a medium bowl, combine 1 cup mayonnaise with 1/2 cup granulated sugar. Set aside. In a large bowl combine broccoli, onion and dried cranberries. Add the mayonnaise mixture to the broccoli mixture, stirring well. Cover and refrigerate until ready to serve. Before serving stir the mixture again and sprinkle bacon bits over the top. Serve Cold.

Not Your Mama’s Potato Salad

In the South, potato salad is a common side dish. I have to confess, I have never liked traditional potato salad. Please don’t hate me! I wanted to like it. I tried making it and changing it, but to my dismay I still didn’t like it. One day I came across a recipe for potato salad with ranch dressing. Still, I didn’t like it. Suddenly one day, I was eating salad and had a crazy idea for this new potato salad. Finally, it was a success! At every party people rave about it. Everyone wants the recipe. The funny thing is, it is an absolutely fool-proof recipe! The layers of flavors are rich, deliciousness. I dare you to try it!

Not Your Mama’s Potato Salad

Ingredients:

  • 8 cups of Red potatoes, washed and cut into 1 inch cubes
  • 1 tsp. salt
  • 1-2 bottles of Caesar Salad Dressing (I love ALDI’s)
  • 1 1/2 cups French Fried Onions
  • 1 cup bacon bits

Directions: Place the cubed potatoes in a large pot and cover with water, just over the tops of the potatoes. Add the salt and cook the potatoes over high heat until they begin to boil. Lower the heat to medium low and cook until the potatoes are tender, but not falling apart. This should take 10-15 minutes. Adjust the time as needed to cook your potatoes. When the potatoes are tender, remove from heat and drain ALL the water off. Now place the potatoes in a large bowl. Pour 1 bottle of Caesar salad Dressing over the potatoes and stir to coat. You may need to use some of the 2nd bottle of dressing- just make sure all the potatoes are coated in the dressing! Cover and refrigerate until ready to serve. This should be served COLD. It will stay fresh in the refrigerator for 3-4 days. Before serving, stir again and sprinkle the French Fried Onions and Bacon Bits over the top. Enjoy!

The Bomb BBQ Sauce

The Bomb BBQ Sauce

Nothing finishes your BBQ off like a rich, delicious sauce! I’ve tried my fair share of sauces but this one is the Bomb! It’s sweet, savory, mouth watering goodness compliments the homemade BBQ Rub. It only takes a few minutes to throw this together! A friend shared her recipe and I changed it to accommodate the ingredients I keep stocked in my pantry. It’s great on BBQ Pork, BBQ Burgers, beef hot dogs, sausage, chicken, veggie burgers, and so much more! The sauce will keep in the refrigerator for up to 2 months. It’s a staple in my kitchen, I always have some ready to serve! Please leave a comment to let me know how you like it!

  • Glass Jar or Plastic pitcher to store sauce in!
  • Spoon to stir

Ingredients
  

  • 2 1/2 Cups Ketchup
  • 1 1/2 Cups Sugar
  • 1/4 Cup Apple Cider Vinegar
  • 2 TBSP Dark Brown Sugar
  • 1 TBSP Dijon Mustard
  • 2 tsp Worcestershire Sauce
  • 1 tsp tabasco sauce add more to taste if you like it hot
  • 1/2 tsp liquid smoke
  • 1 1/2 tsp salt
  • 1 tsp ground black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder

Instructions
 

  • Directions: Combine all ingredients in a medium saucepan and cook on medium heat until it begins to boil, stirring slowly. Lower heat and simmer for 15 minutes, continue stirring occasionally. Serve immediately or allow to cool before storing in an airtight container in the refrigerator. Enjoy!

BBQ Seasoning Rub

Over the next few weeks I will share with you my favorite BBQ recipes. BBQ Pork is one of my all time favorite foods. I love all things BBQ, from the sauce to the side dishes- there are so many things to love about BBQ. Who doesn’t love to cook outdoors, gathering with family and friends to share a delicious meal?

It’s amazing that with just a few ingredients and less than TEN minutes, you can have a delicious home made BBQ Rub. I hope you love it!

BBQ Seasoning Rub

Equipment

  • Bowl to mix the seasonings in
  • Small Jar or storage container to store the BBQ Rub in a cool, dry place.

Ingredients
  

  • 4 TBSP Lemon Pepper Seasoning
  • 2 TBSP Paprika
  • 1 TBSP Ground Black Pepper
  • 1 tsp Ground Cayenne Pepper
  • 2 TBSP Salt
  • 2 TBSP Garlic Powder
  • 2 tsp Onion Powder

Instructions
 

BBQ Seasoning Rub

  • Place all ingredients in a small mixing bowl and stir until well combined. Store in an airtight container in a cool, dry place until ready to use.

Pork BBQ

  • For traditional Pork BBQ, purchase a Boston Butt. This is also sometimes called a Shoulder Roast. You may use other cuts like Ribs, Pork Loin or Pork Tenderloin.
  • Prepare the meat by rinsing and drying with paper towels. (I use a disposable foil pan for this step.) Coat the meat with a generous amount of the BBQ Seasoning Rub on all sides. Rub the seasoning into the meat. Cover with plastic wrap and refrigerate overnight.
  • Smoke the meat according to your smoker and the weight of your cut.
    Another option is to slow cook the meat in a crock pot for 8 hours on low. Add 1 TBSP of Liquid Smoke Flavoring to get the smokey flavor. Cook time may vary depending on the weight of your pork butt. The general rule of thumb is that the meat should pull off the bone easily with a fork.

Directions: Combine all ingredients and stir until mixed thoroughly. Store in an airtight container. Apply generously to large cuts of meat; sprinkle sparingly on chicken, burgers, and other small cuts of meat. Let the rub marinate, covered in the refrigerator overnight. Smoke, or grill as directed for desired meat temperature.

Blackened Rub

Smoked Chicken with Blackened Rub

There are so many spices and grilling rubs available pre-mixed but why not try making your own? It is such an easy thing to mix a bowl of seasoning to grill chicken, steak, burgers, ribs, fish or pork chops. A friend of mine introduced me to home made rubs and sauces when I was in my early twenties. I have learned to tweak the recipes I find, adding more hot spice or sweetness if I find it needs something more. Try it out and taste it. Change it if there is anything you don’t like. I tried several recipes before settling on this one. This Blackened Seasoning Rub is great on everything! These bone in Chicken Breasts are smoked with the rub applied generously. The sugar and oregano are what cause the “blackening”. Let me know if you like it in the comments!

Blackened Seasoning Rub

Ingredients:

  • 2 tsp. Paprika
  • 4 tsp. Thyme
  • 2 tsp. Onion Powder
  • 2 tsp. Lawry’s Garlic Salt
  • 1 TBSP. light brown sugar
  • 2 tsp. Cayenne Pepper
  • 1 tsp. Oregano
  • 3/4 tsp. ground Cumin
  • 1/2 tsp. ground Nutmeg

Directions: Combine all ingredients in a small bowl, mixing until thoroughly combined. Sprinkle on your choice of meat and prepare as desired. Store in an airtight container.
