Italian Herb and Oil Dip

A good, authentic Italian restaurant will serve this Italian Herb and Oil dip with fresh baked bread. During the recent shutdown, I found myself wishing I could go to dinner at Carabas where I would enjoy a delicious salad, my favorite Mezaluna Pasta, and the Italian Herb and Oil Dip with fresh baked bread. I don’t know why it has never occurred to me to make this! I found several copy cat recipes online but in the end, I felt they needed more garlic. I’m growing fresh rosemary and basil, but shopped at Walmart for the other herbs. While I was shopping, I discovered they have a lightly dried Italian herb blend available in the fresh herb section.

This has inspired a couple of new recipes I will share over the next few days! The layers of fresh herbs and intense garlic flavor are truly irresistible!

Equipment

  • Cutting Board
  • knife to chop herbs
  • measuring spoons
  • garlic press
  • small bowl

Ingredients
  

  • 4 cloves garlic, pressed
  • 3 TBSP Italian herb mix (1 TBSP Oregano, 1 TBSP Parsely, 1/2 TBSP Basil- all finely minced) Look in the grocery for this mix near fresh herbs!
  • 1 TBSP Fresh Rosemary- finely minced
  • 1 tsp crushed Red Pepper Flakes
  • 1/2 tsp kosher salt
  • 1/4 tsp coarse ground black pepper
  • 1/4 cup olive oil reserved for serving

Instructions
 

  • Mix all herbs, salt, and pepper in a small bowl. Stir well, you may need to press the garlic into the mix to combine it with the other herbs. Store in an airtight container and refrigerate until ready to serve. This will keep up to 1 week in the refrigerator.

Blackberry Cream Cheese

We have more blackberries than I can possibly pick! This delightfully easy spread will be a wonderful addition to any breakfast or Brunch menu! A perfect little appetizer with pita crackers for your dinner party. The possibilities are endless! This takes less than 10 minutes to make and no baking or cooking required! Enjoy!

This tastes like blackberry cheesecake! Spread it on pita crackers, toast, pancakes, french toast, waffles, or bagels! The possibilities are endless for this quick, easy recipe!

  • lemon zester
  • spoon
  • airtight container for storage

Ingredients
  

  • 1 8 oz cream cheese
  • 1/4 cup sugar
  • 1 cup blackberries
  • 1/4 tsp almond extract
  • 1 lemon, zested

Instructions
 

  • In a food processor, combine al ingredients with the mixing blade until smooth and creamy. Store in an airtight container in the refrigerator until ready to serve. Stays fresh 1 week in the refrigerator.

Garden Fresh Salsa

All Fresh Ingredients!

Who can resist chips and salsa? The wonderful thing about Fresh Garden Salsa is the ability to make it as spicy or mild as you choose. Fresh tomatoes, red onions, lime, cilantro, garlic, jalapeños, and bell peppers come together to create the perfect salsa. All the fresh veggies combine a layer of flavors to tantalize your tastebuds! I’m addicted to this stuff! In a matter of minutes the salsa is chip-ready!

Garden Fresh Salsa

Ingredients:

  • 1 large Bell Pepper- any color is fine
  • 4 Garlic Cloves, peeled
  • 1 Cup Fresh Cilantro
  • 2 limes- zest and juiced
  • 1/4 medium Red Onion
  • 1/2 jalapeño, seeds removed
  • 8 Roma Tomatoes
  • 1 tsp. Ground Cumin
  • 1 tsp. Sea Salt
  • 1 tsp. Black Pepper
  • 1 tsp. Cayenne Pepper- more if you like it Spicy

Directions: Wash and prepare the Bell Pepper, jalapeño, Red Onion and Roma Tomatoes by cutting into large chunks and placing in your food processor with the chopping blade installed. Next, add the remaining ingredients to the food processor. Process on high, pulsing and checking for the consistency you desire. It’s up to you! Make it chunky or smooth! Serve immediately. Refrigerate in an airtight container for up to 1 week. Enjoy!
