
Too Good to Believe!
A popular chain restaurant ,P.F. Chang’s, serves this as an appetizer. I would seriously go across the state to eat this meal, so when I came across a copy cat recipe for this I had to try it! I changed a couple of ingredients after the first attempt and found the perfect copycat combination! Grab these ingredients at your local grocery and start prepping this delicious meal that will wow your family! I don’t think we have been back to the restaurant since I discovered this amazing recipe.
Since this meal requires more prep than my normal meals, I usually triple this recipe to make the most of my time. We enjoy a delicious, fresh meal, then I freeze quart size bags of the remaining filling to serve for dinner later in the month. This meal freezes really well! Pair it with a bowl of egg-drop soup for a complete meal.
Prepping the Ingredients is Key!
The key to success with this is to prep all the ingredients. By preparing them in THIS specific order, you can eliminate washing the processor in between each ingredient! With a food processor, prepare these ingredients individually and place in separate bowls unless indicated by the recipe: Minced Onion, Minced Garlic, Minced Ginger (peeled), and Minced Water Chestnuts. The final ingredient to prepare in the food processor is the ground chicken. You can purchase ground chicken or ground turkey at the grocery, but I prefer the texture and taste of home ground chicken. I know, it sounds complicated, but it isn’t! All you need is fresh boneless/ skinless chicken breast and a food processor. Simply place the quartered chicken breast in the food processor and pulse on high until it looks thoroughly chopped. The ingredients will look like this:

Once the ingredients are prepared, the fun begins! I usually place the ingredients beside the cooktop in the order I will be adding them to the pan. You have to be ready with the next ingredient since it cooks so quickly! I also prepare the Iceberg Lettuce by separating, washing and drying the leaves to use as a wrap for this delicious chicken filling.
Chicken Lettuce Wraps
Equipment
- Food Processor with Chopping Blade
- Large Skillet
- Can opener
- Knife
- 7 small to medium size bowls
- spoon
- Spatula
Ingredients
The Sauce
- 2 1/2 TBSP Soy Sauce Find in the Oriental Food Section of the grocery
- 1 TBSP +1 tsp Rice Vinegar Oriental Food Section
- 1 TBSP Sesame Oil Oriental Food Section
- 1 TBSP Peanut Butter
- 1/2 TBSP water
- 1/2 TBSP Light Brown Sugar
- 2 tsp Sriracha Chili Sauce Oriental Food Section
Chicken Lettuce Wrap Filling
- 1 Pound Ground Chicken Breast 1 large Chicken Breast if grinding at home!
- 1/2 White Onion, minced
- 2 Garlic Cloves, minced
- 1" Knob Fresh Ginger, peeled and minced This is found in the produce section!
- 4 Green Onions, chopped
- 1/2 8oz Can Water Chestnuts, drained and minced
Garnish & Serve
- 1/4 Cup Dry Roasted Peanuts, chopped
- 1 Iceburg Lettuce Head, Separated, Washed and Dried Keep the Lettuce Leaves as large as possible when deconstructing!
Instructions
Sauce
- In a microwave safe bowl, combine the sauce ingredients.
- Microwave on high for 20 seconds. Stir until smooth.
- Set aside- this will be added later!
Chicken Lettuce Wrap Filling
- Heat a large skillet on high. Non-stick works best! Add the ground chicken and onion, breaking up the chicken while it cooks, until chicken is almost done.
- Add the garlic and ginger. Cook until chicken is cooked through.
- Add the Sauce you prepared earlier! Stir the mixture well.
- Add Green Onion and Water Chestnuts, cooking for an additional 2 minutes. The onions should be soft!
- Sprinkle with chopped peanuts and serve "wrapped" in lettuce like a soft taco. Enjoy!
