If you haven’t noticed, I really like BBQ. I just think the sauce is delicious. I like Pork, Chicken, Sausage- even BBQ Burgers! Years ago, I was trying to think of something to do with this big bag of meatballs I bought at Sams Club. (Sometimes I make my own meatballs, but I do like the meatballs from Sams Club too.) A popular appetizer in the south is meatballs with grape jelly and chili sauce. So the idea for BBQ Meatballs came to me out of nowhere. I serve this over Cheesy Rice- simply make some white rice per the instructions and stir in 1/2 to 1 cup of shredded cheddar cheese. Salt to taste with Lawry’s Garlic Salt. The flavors of my homemade sauce go really well with the addition of pineapple and green bell peppers so keep that in mind if you use a different sauce.
I recently made this for one of the meals to serve displaced tornado victims. We had 3 large pots of BBQ Meatballs, four large pans of cheesy rice, three pans of roasted broccoli (perfect side dish for this meal!) and homemade Raspberry Cream Cheese Rolls. My 8th grade Homeschool class (Challenge B) came to help me!
- 1 can crushed pineapple or pineapple tidbits
- 1 green bell pepper- diced
- 2 cups The Bomb BBQ Sauce
- 6-8 cups fully cooked meatballs/ frozen meatballs
- Cheesy Rice- instructions for this are mentioned above!
Directions: Combine meatballs, BBQ sauce, diced bell pepper, and 1 can of crushed pineapple in a large pot. Cook on medium high heat until boiling, stirring occasionally. Lower heat to low and simmer for 15 minutes. Serve hot over cheesy rice!
