Breakfast Bran Muffins

Ya’ll, these are so easy and they always turn out great! I love that they are not loaded with the sugar you find in store bought muffin mix. When I made these today, my daughter came to visit and saw them sitting on the counter. She was so excited to know they were Breakfast Bran Muffins! Try one warm with a little butter!

Breakfast Bran Muffins

Ingredients:

  • 2 1/2 cups Raisin Bran cereal
  • 1 cup milk
  • 1/3 cup light brown sugar
  • 1 egg, beaten
  • 3 TBSP vegetable oil
  • 1 tsp. ground cinnamon
  • 1 TBSP. baking powder
  • 1/4 tsp. salt
  • 1 1/4 cups Plain Flour

Directions: Preheat oven to 400 degrees. In a mixing bowl, combine Raisin Bran Cereal, milk, light brown sugar, egg and vegetable oil. Allow that to sit for 5 minutes before adding the cinnamon, baking powder, salt and flour, mixing to incorporate all the dry ingredients. Prepare muffin tins with cooking spray and fill each muffin tin 2/3 full. Bake at 400 degrees for 15-18 minutes. This recipe makes 1 dozen muffins. Serve warm and enjoy!

Variations: If you don’t like raisins, just use plain bran cereal! If you love raisins, add 1/2 cup of extra raisins!
